CLEANING AND SANITISATION OF KITCHEN HOODS


The hygiene standards for internal areas of boats require that extractor hoods, filters and surrounding areas (including work and support surfaces) are always cleaned and sanitised in compliance with the provisions of Legislative Decree 155/97 HACCP regarding health surveillance.


A thorough cleaning of the extraction system allows the hood to function correctly, thus avoiding greasy, carbonised or viscous residues that can generate dripping and even dangerous local fires.


Typical problems of kitchens on boats are related to the smoke extraction system. In this regard, with our staff we video-inspect and record with optical fibre the real state of the kitchen hood and the channel.


The extracted fumes are composed of a high percentage of grease that accumulates in filters, hoods, ducts and extractors, this grease is highly flammable, and is responsible for most fires that occur in kitchens.
